Default HT guru's chime in

I'm a super n00b when it comes to HT, and looking for some input/suggestions. Currently my HT is no older than about 2 years old, but my kids are getting smear marks on the TV, and my 2 year old keeps yanking wires out of the satellite speakers, and keeps hanging on them... Plus I wanna upgrade lol
My plans for use would be basically daily(cartoons for the kids) and movies on weekends.

I currently have....
65" Toshiba 1080p DLP tv;
Toshiba | ARCHIVED: 65HM167: 65 Diagonal 1080p DLP® TV

DENON AVR-1609 7.1 HT reciever;

My living room is 21'x14' and 8.5' ceilings, with a big opening in the side of the room going into the dining room like in the drawing attached.

My questions now lol,
(1)which would you choose for TV and why?
(2) I've heard projectors have come a long way, will picture quality be as good if not better than a TV like my old one(the 65" Toshiba)?
(3)The satellite speakers would have to be in the walls due to my monster kids playing with the wires, and for a more flush look. Would the type I posted up there be/sound good in a HT setting?
(4) Which subwoofer and amp would be stronger, and the best deal for my HT set up?
(5)I was told by a friend that does HT installs, and he told me that 5.1 might be better in my room, something about 7.1 blending togather and not sounding as good... This true?

Thanks for any input. I am getting headaches researching this because I keep finding conflicting opinions about everything and don't want to make the wrong purchase lol.
If any of you have anything better you could recommend then by all means. I'm looking to spend ~$2,500 on a TV, and up to $1,000 for the satellite speakers, and ~$600 for the sub/amp.

VERY few movies have actual 7.1 discreet, so the rear channels matrix sound from the side surrounds. 5.1 will be fine.

Spend the most $$$ on the center channel and the sub as those have the most impact when movie viewing.

I prefer a TV for TV watching and projector for movies. Build a DIY screen that you can store somewhere. The electric screens can have issues with not staying flat unless you spend a LOT of $$$ for a good one.

RL-P's make excellent HT subs. Go LLT, large, low tuned if it's mostly going to be for movies. I've built several of them. AE's are also very popular but I've never built one, so can't comment on those.

Just gave a HT demo tonight, 14Hz scene had the walls flexing bad and then AC/DC had our ears bleeding.

I have a 50" plasma and a 92" screen with an older 480p projector and I'll take the projector any day of the week. The big screen impresses me much more then some finer detail.

most of the time if you have never done a home theater before you will end up with way to much power/subwoofers
